Why does it matter?
Coffee is at its peak aromatic potential 4 to 14 days post-roast. After about 30 days, the volatile aromatic oils that make specialty coffee taste like specialty coffee start disappearing. The bag at the grocery store has typically been sitting on a shelf for weeks before you ever see it. By the time you brew it, it's a faint echo of what it could have been. We don't do that.
